I love carrot cake. Love it. I love the textures, the spices and of course, I love the cream cheese frosting that almost always tops a good piece of carrot cake. That being said, I would probably get violently ill if I were to enjoy a piece today; ever since I’ve gone paleo, I just don’t tolerate flours or dairy very well.
I recently bought 30 Healthy Desserts You Can Eat Everyday for my Kindle for only $4.99. I decided to try out the carrot cake recipe first.
The ingredients were all readily available to me and I had all of the spices on hand which made it a safe bet for experimentation.
